Oh My Reese'S Cupcakes
- 1 cup unsalted butter
- 2 cups granulated sugar
- 4 egg yolks room temperature
- 2 cups white flour regular
- 4 teaspoons baking powder
- 1 cup greek yogurt
- 4 egg whites room temperature
- 2 teaspoons vanilla extract
- 1/2 teaspoon salt
- 1 cup butter room temperature
- 5 cups icing sugar sifted
- milk or cream for thinning
- salt to cut the sweetness
- peanut butter Jar of Reese Chocolate, Spread
- For the Cupcakes: Preheat oven to 35ou0b0 F and line muffin tins with liners
- Sift flour with baking powder and salt into a bowl
- In another bowl cream butter and sugar
- Beat in egg yolks
- Add vanilla
- Add the yogurt (in 2 parts) and flour (in 3 parts) to the butter/sugar mixture making sure you begin and end with flour
- In another bowl beat the egg whites till stiff
- Gently fold into batter
- Fill liners 2/3 full
- Bake for 20 minutes
- Cool on rack
- With cooled Cupcakes: Scoop out the middle of the cupcake and keep the piece for reuse
- Spoon in some of the spread into each of the cupcakes
- Top the the chocolate spread with the piece of cupcake
- For the Frosting: Cream the butter and icing sugar (adding some salt to cut the sweetness), thinning with milk or cream to reach desired consistency
- Place a dollop of Reese spread in the middle (top) of each cupcake
- Pipe frosting around chocolate
