Udon Noodles With Spicy Ground Pork
- 2 pounds fresh udon noodles
- 4 spring onions sliced diagonally
- 1 tablespoon sesame oil
- 2 tablespoons peanut oil
- 2 pounds ground pork
- 2 tablespoons chinese rice wine or dry sherry
- 1 tablespoon ginger grated
- 2 cloves garlic peeled and crushed
- 1/3 cup hoisin sauce
- 2 tablespoons black bean sauce chili
- 1 tablespoon soy sauce
- 1 cup chicken stock
- cucumber diced, to serve
- cilantro leaves to serve
- Prepare noodles according to package instructions. Drain and toss with half of the spring onions and half the sesame oil.
- For the pork sauce, heat peanut oil in a wok over medium heat. Add pork and stir-fry 2-3 mins, until browned. Add wine and stir-fry 1 min, or until evaporated. Remove pork from wok and set aside. Add ginger, garlic and remaining spring onion to wok and stir-fry 30 seconds. Add sauces and stir-fry 30 seconds. Return pork to wok along with stock and bring to a boil. Reduce heat and simmer 10 mins, until thickened. Stir in remaining sesame oil. Serve noodles with pork sauce, cucumber and cilantro.
