Plantain Porridge
- 3 green plantains Pealed & Chopped Into 5 Piece Each, placed in a bowl of salt water to prevent them going brown
- 1 pint milk
- 1/4 cup condensed milk
- 3 tablespoons brown sugar
- 2 cinnamon sticks
- 1/2 teaspoon all-spice
- 1/2 grated nutmeg
- 3 cups water
- 1 tablespoon vanilla essence
- 1 pinch salt
- Firstly add your 3 cups of water to a pot with cinnamon sticks and allow to come to a boil a medium heat.
- While boiling, remove plantain from salt water and add your chopped green plantains to a blender with the pint of milk and blend until it is in a smooth consistency without lumps.
- Add blended plantains to the pot you have boiling.nurn your heat to low.
- Using a spoon or whisk stir the mixture in the pot for 5-10 minutes until it thickens (be sure not to stop stirring as it will result in unwanted lumps in your porridge). If needed, add an additional 1 cup of milk until you reach your desired consistency.
- Add condensed milk, brown sugar, vanilla essence, all spice and nutmeg to the porridge. Stir and make sure that all the ingredients are evenly mixed in.
- Add a pinch of salt to bring out the flavour and balance the sweet taste.
