Layered Chicken Salad
- 4 pounds chicken
- 1 cup soy sauce
- 1/4 cup granulated sugar
- 1 teaspoon sesame oil
- 1 teaspoon five spice powder
- 1/4 cup fresh ginger sliced
- 1 clove garlic minced
- 1 pound broccoli coarsely chopped
- 1 red pepper medium, sliced
- 13 1/2 ounces baby corn drained
- 3 spring onions sliced
- dressing Ginger
- 1/3 cup peanut oil
- 2 teaspoons honey
- 2 teaspoons white vinegar
- 1 teaspoon soy sauce
- 3/4 cup fresh ginger grated
- Combine soy sauce, 1 cup water, sugar, oil, five-spice powder, ginger and garlic in a large saucepan. Add chicken and bring to a boil, uncovered. Reduce heat, cover and simmer for about 40 mins, or until cooked, turning once. Let chicken cool in covered saucepan. Drain chicken, remove meat and slice.
- Meanwhile, boil, steam or microwave broccoli until tender. Rinse under cold water then drain.
- To make the ginger dressing, whisk all ingredients until combined.
- Layer chicken, broccoli, red pepper, corn and onion in a large bowl. Pour dressing over salad just before serving.
