Mom'S Minestrone
- 2 to 3 medium onions, sliced
- 2 to 3 all-purpose potatoes, cut up
- 3 to 4 carrots, sliced
- 1 pkg. frozen cut green beans
- 1 pkg. frozen petite peas
- a few sprigs fresh parsley
- 1 few lettuce leaves, cut up *
- 1 celery stalk, cut up *
- 2 zucchini, thickly sliced *
- other vegetables to taste *
- 1 (14 oz.) can whole tomatoes
- 1 1/2 to 2 c. broth
- salt and pepper to taste
- small pasta (ditalini, tubetti, little shells, nothing larger than elbow macaroni)
- Brown sliced onions in oil at bottom of large soup pot.
- Turn off heat while you prepare and add all other ingredients, except pasta.
- The beauty of this recipe is that you can include almost anything you have and like and the amounts do not have be exact. (*The starred vegetables are definitely optional.)
