Pasta E Fagioli(Macaroni And Beans)
- 1/4 c. salad or olive oil
- 1 clove garlic, crushed
- 1 c. chopped onion
- 1 (1 lb.) can Italian tomatoes (undrained)
- 1 tsp. salt
- 1/4 tsp. ground pepper
- 1/2 tsp. dried oregano leaves
- 2 Tbsp. chopped parsley
- 1 Tbsp. salt
- 1 1/2 qt. boiling water
- 1/2 pkg. (7 or 8 oz. size) shell macaroni, elbow macaroni or other tubular pasta (2 c. cooked)
- 1 (15 oz.) can red kidney beans or cannellini beans (undrained)
- grated Parmesan cheese
- In hot oil in 5-quart Dutch oven or heavy kettle, saute garlic and onion, stirring, until golden, about 5 minutes.
- Add tomatoes, 1 teaspoon salt, pepper, oregano and parsley.
- Simmer, covered, 30 minutes.
- Mash tomatoes.
