Tofu Lasagna

  1. Saute onion in butter; add chopped mushrooms and cook slightly.
  2. Set aside.
  3. Boil noodles; then drain.
  4. Drain tofu and mash; add to onion and mushrooms along with spices.
  5. Spread enough spaghetti sauce in bottom of a 9 x 13-inch pan to cover.
  6. Layer noodles, tofu mixture, Mozzarella cheese and sauce.
  7. After last layer of noodles, finish with sauce, Mozzarella cheese and Parmesan cheeses.
  8. Bake at 350u0b0 for 30 minutes or until cheeses are golden brown and sauce is bubbly.
