Sweet Pickle Relish

  1. To save time I chop the vegetables in a food processor. In a large bowl, combine all the vegetables, then sprinkle the salt over them and cover with cold water.
  2. Let stand 2 hours. Drain. In a large pot, combine the sugar, vinegar and spices; bring

  4. boil.
  5. Add the vegetables.
  6. Return to a boil and lower
  7. heat. Simmer
  8. 12
  9. minutes.
  10. Pack
  11. into
  12. hot sterilized jars,
  13. leaving 1/4 inch headspace.
  14. Wipe jar rims and cover at once with metal lids and screw on bands.
  15. Process in hot water bath for 10 minutes.
  16. Yield: 4 half pints.
