Sweet Pickle Relish
- 4 c. chopped cucumbers
- 3/4 c. chopped bell pepper
- 3/4 c. chopped sweet red pepper
- 2 c. chopped onion
- 1/4 c. pickling salt
- 1 3/4 c. sugar
- 1 c. cider vinegar
- 1 1/2 tsp. mustard seed
- 1 1/2 tsp. celery seed
- To save time I chop the vegetables in a food processor. In a large bowl, combine all the vegetables, then sprinkle the salt over them and cover with cold water.
- Let stand 2 hours. Drain. In a large pot, combine the sugar, vinegar and spices; bring
- to a
- boil.
- Add the vegetables.
- Return to a boil and lower
- heat. Simmer
- 12
- minutes.
- Pack
- into
- hot sterilized jars,
- leaving 1/4 inch headspace.
- Wipe jar rims and cover at once with metal lids and screw on bands.
- Process in hot water bath for 10 minutes.
- Yield: 4 half pints.
