Four-Cheese Pasta
- 1 pound pasta cooked & drained
- olive oil
- 1 onion medium, chopped
- 2 cloves garlic chopped
- 1 can crushed tomatoes 28-oz
- 1 teaspoon basil
- 1 teaspoon dried oregano
- 1 ricotta cheese 15-oz
- 1 pound mozzarella cheese grated
- 6 swiss cheese slcs
- 6 provolone cheese slcs
- In a large skillet, saute onions in a bit of olive oil. Add garlic and cook just until you smell the garlic; quickly add in crushed tomatoes. Stir in basil and oregano, cover and simmer on medium-high heat for 5 minutes.
- Cover bottom of 9x13" dish with tomato mixture. Layer in this order: 1/3 pasta, all the Ricotta cheese, Mozzarella cheese, sauce, pasta, Swiss cheese, pasta and the remainder of the sauce. Top with Provolone cheese. Cover and bake at 400i for 20-30 minutes or until heated through and cheese is melted.
