Low Carb Roasted Fennel Turkey Burgers
- fennel fresh
- fresh lemons
- olive oil
- balsamic vinegar or white vinegar
- spices italian
- walnuts
- shaved Parmesan cheese
- ground turkey
- salt
- pepper
- greens fresh, choice, spring mix or arugula
- Slice the fresh fennel stalks thinly, like an onion. Don't discard the bulb and fronds of the fennel. Instead, place them in the bottom of a baking dish. They provide a nice layer on the bottom of the dish to prop up the sliced fennel stalks. Lay the thinly sliced stalks on top and squeeze a lemon wedge over the top. Leave the lemon pieces in the baking dish.
- In a separate bowl whip up some homemade dressing by combining olive oil, balsamic vinegar, lemon juice and italian spices (to taste). Pour this dressing over the fennel. Sprinkle some freshly roasted walnuts on top. Then sprinkle some shaved parmesan cheese on top. Roast the fennel in a 400 degree oven for about 30 minutes. After the fennel has roasted, top with fresh cracked black pepper. The turkey burger topping is now ready!
- While the fennel is roasting in the oven, form the low carb turkey burger patties. Be sure to season the patties well with salt and pepper. Grill them up, timing the completion of the turkey burgers with the completion of the fennel roasting. The turkey burger patties can be grilled on an actual grill or in a grill pan on the stove. Cook the patties for about five minutes per side or until slightly browned. Remember, turkey burgers need to reach an internal temperature of 165 degrees F according to the National Turkey Federation.
- Top the grilled turkey burger patties with the sliced roasted fennel, walnuts and parmesan. Serve it all over a bed of fresh greens. Enjoy!
