Mexican Spaghetti
- 2 tablespoons olive oil
- 2 pork chops cubed
- 1/4 cup green onion
- 2 teaspoons chopped garlic
- 1 teaspoon season salt
- 1 tablespoon Mexican seasoning
- 1 cup roma tomato full of diced
- 3 tablespoons Parmesan fresh
- 2 jalapenos seeded and diced
- 16 ounces spaghetti cook, choice set to side.
- in a very large skillet add 2 tablespoons of olive oil and place on medium heat. Once the oil is warmed up at your pork chops and cook until slightly brown. Add the garlic and season salt. Lower the heat slightly add your jalapeno and green onion. Cook for about 3 - 4 minutes then add your tomatoes and Mexican seasoning.. quickly toss in your cooked spaghetti and turn heat down to low.
- Garnish with fresh Parmesan cheese and chives

- If you like you can add a little bit more olive oil and substitute pork for shrimp or chicken
