Tom Kha Soup!
- 4 cups vegetable broth
- 1 ginger thumb-sized piece of, thinly sliced
- 3 inches lemongrass piece of, bruised with heel of a knife
- 14 ounces coconut milk
- 2 limes
- 4 tablespoons fish sauce
- 3 chicken thighs bone-in & skinless, about 1-1.5 lbs
- 1/2 onion thinly sliced
- 1 cup bean sprouts rinsed
- 1 package firm tofu drained and cubed
- 1/2 cup snow peas
- 1/2 cup snap peas
- 1/2 cup green beans
- 1 zucchini sliced
- 1 can baby corn spears, cut into bite sized pieces
- 1 can water chestnuts sliced, drained
- 4 ounces cremini mushrooms shittake, whatever you have on hand or a blend of the three, quartered
- 1 head broccoli cut into florets
- 2 carrots ends cut off and peeled
- 2 cups white rice cooked, short-grain
- Sriracha
- cilantro coarsely chopped
