Spiced Fried Vegetables
- 4 1/4 cups vegetable oil for frying
- chickpea flour 200 g gram
- 1 teaspoon salt
- 1/2 teaspoon chilli powder
- 1 teaspoon ground cumin
- 1/2 teaspoon baking powder
- 2 onions cut into wedges
- 1/2 head cauliflower cut into florets
- 3 potatoes peeled and roughly chopped
- 2 plantains peeled and cut into thick slices
- mango chutney to serve
- fresh herbs to garnish
- Heat the oil in a saucepan until it shimmers. Mix the flour, salt, chili powder, cumin and baking powder together in a bowl. Stir in 1 1/8 cups cold water until a thick, smooth batter forms.
- Drag each piece of vegetable through the batter, then lower it into the hot oil. Fry for 4-6 mins, depending on the size of the vegetable. Remove using a slotted spoon. Serve with mango chutney and sprinkle with herbs.
