Cranberry Loaf

  1. Preheat the oven to 350 degrees; coat inside of 9x5 loaf pan with nonstick spray.
  2. Whisk together flour, baking soda, baking powder, cinnamon, salt and clove in a bowl - make a well in the center and set aside.
  3. Toss cranberries in 1/4 cup of the sugar in a small bowl and set aside.
  4. Whisk together milk, remainder of sugar, eggs, oil, zest and vanilla.
  5. Pour milk mixture into well in dry ingredients and stir only till dry ingredients are moist.
  6. Stir in cranberries.
  7. Pour mixture in loaf pan and bake for about 1 hour or till toothpick comes out clean.
  8. Cool for about 1 hour or so before serving.
