Huevos Con Chorizo
- 12 large eggs
- 2 ounces cream cheese at room temperature
- 2 tablespoons milk or cream
- 1/2 teaspoon salt
- 8 ounces Mexican chorizo sausage chopped
- 2 tablespoons Crisco Pure Vegetable Oil
- 3 green onions thinly sliced
- 1 tomato large ripe, chopped
- salt
- pepper
- 1/2 cup queso fresco cheese crumbled
- 2 tablespoons cilantro leaves chopped
- corn tortillas Warm
- hot pepper sauce
- BLEND eggs, cream cheese, milk and salt in blender until smooth.
- BROWN chorizo in a hot large nonstick skillet over medium heat until heated through, about 4 to 5 minutes, stirring occasionally. Remove sausage from skillet; drain on paper towels.
- HEAT oil in same skillet over medium heat. Add egg mixture; cook 2 minutes, stirring occasionally. Stir in green onions and reserved sausage. Cook an additional 2 minutes or until eggs are just set. Stir in tomatoes if using. Season with salt and pepper to taste. Sprinkle with queso fresco and cilantro. Serve with tortillas and hot pepper sauce, if desired.
