Sweet Mango Chutney
- 2 1/4 pounds mangoes ripe, peeled, seeded and diced
- 1 green apple peeled, cored and sliced
- 1/4 cup malt vinegar
- 1 cup brown sugar packed
- 3 green onions chopped
- 1 tablespoon raisins
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon ground cinnamon
- 1 pinch salt
- Place mangoes, apple and vinegar in a large heavy-bottomed saucepan on medium heat. Bring to a boil, stirring. Reduce heat to low; simmer, covered, for 8-10 mins until tender.
- Stir in sugar, onions, raisins, red pepper flakes, cinnamon and salt. Simmer, uncovered, for 20 mins, stirring frequently, until mixture is thick and glossy.
- Pour into hot sterilized jars and seal immediately. Store in a cool dry place for up to 2 months. Once opened, store in the refrigerator.
