Honey Mustard Quorn/Chicken With Avocado And Roasted Tomatoes On A Bed Of Beans

  1. Quarter the tomatoes and dress lightly with oil, salt and pepper, turning your oven up to 200u0b0C
  2. Place the oiled tomatoes on a baking tray and place into the oven for 20 minutes. While they are roasting, continue with the other steps
  3. Combine the olive oil, mustard, garlic, honey and a pinch of salt in a bowl, whisking well to thoroughly combine
  4. Oil a pan and fry your Quorn or Chicken fillet(s), pouring the honey mustard mixture over the top as it fries and thoroughly coating it.
  5. Prepare the avocado by slicing it into thin pieces
  6. Add all of the beans to a pan of boiling water and cook until tender
  7. Lay the beans out on a plate, topping with the avocado slices and roasted tomatoes
  8. Finish the dish by topping with the sliced Quorn/chicken and dress with a small amount of olive oil and honey
