Honey Mustard Quorn/Chicken With Avocado And Roasted Tomatoes On A Bed Of Beans
- Two Quorn/chicken fillets
- 1 1/2 teaspoon dijon mustard
- 1 teaspoon olive oil
- Salt
- 3 teaspoons honey/golden syrup
- handful of fresh cherry tomatoes
- broad beans
- sweetcorn
- garden peas
- half an avocado
- Garlic clove
- Quarter the tomatoes and dress lightly with oil, salt and pepper, turning your oven up to 200u0b0C
- Place the oiled tomatoes on a baking tray and place into the oven for 20 minutes. While they are roasting, continue with the other steps
- Combine the olive oil, mustard, garlic, honey and a pinch of salt in a bowl, whisking well to thoroughly combine
- Oil a pan and fry your Quorn or Chicken fillet(s), pouring the honey mustard mixture over the top as it fries and thoroughly coating it.
- Prepare the avocado by slicing it into thin pieces
- Add all of the beans to a pan of boiling water and cook until tender
- Lay the beans out on a plate, topping with the avocado slices and roasted tomatoes
- Finish the dish by topping with the sliced Quorn/chicken and dress with a small amount of olive oil and honey
