Pie Fish On A Bed Of Vegetables
- 3 3/8 tablespoons olive oil
- 3 garlic cloves chopped
- 1 leeks white part only, sliced
- 1 zucchini cubed
- 2 tomatoes ripe, cubed
- 10 basil leaves
- salt to taste
- 1 2/3 pounds potatoes
- 5/8 cup milk
- 7/8 pound hake fillets
- 1 1/2 cups salmon loins
- 5/8 cup milk
- nutmeg to taste
- 3 1/2 ounces Ilha Azul Cheese
- semi-hard cheese
- 3 chives chopped
- Preheat oven to 180u0b0C (approximately 350u0b0F).
- Heat 30 ml olive oil in a saucepan, add garlic and leek.
- Simmer over low heat for about 10 minutes.
- Add zucchini, tomato, basil leaves and season with a pinch of salt.
- Cook for 5 minutes, until the zucchini is tender.
- Remove vegetables from heat and set aside.
- Cook potatoes in plenty of boiling, salted water until knife-tender.
- Just before the potatoes are finished cooking, add fish.
- Drain fish and potatoes and set aside.
- In a saucepan, heat 20 ml olive oil and cook 1 garlic clove over medium heat for about 3 minutes.
- Process potatoes through a food mill into the pan with garlic.
- Add milk and season with salt and nutmeg.
- Mix well until puree is smooth and creamy.
- In a rectangular baking dish, arrange vegetables in an even layer in bottom of pan.
- Top vegetables with a layer of salmon and hake.
- Spread mashed potatoes in an even layer over fish and sprinkle potatoes with grated cheese.
- Bake in preheated oven until cheese is melted and bubbly.
- To serve, sprinkle with chives.
