Spent Grain, Ginger, Cashew & Apricot Granola Bars
- 2 cups oats (180g)
- 1/2 cup spent grain, coarsely ground (70g)
- 1 cup cashews, coarsely chopped (130g)
- 1 cup dried apricots, coarsely chopped (200g)
- 1/2 cup crystallized ginger, finely chopped (100g)
- 1/2 tsp salt
- 1/2 cup butter (112g)
- 1/2 cup brown sugar (85g)
- 1/3 cup honey (116g)
- 2 tbsp water
- Preheat oven to 175C & line a 9x13 inch baking tray with buttered greaseproof paper
- Coarsely chop 1 cup of cashews, 1 cup of apricots and 1/2 cup of crystallised ginger
- Add these to a large bowl & stir in n cups of oats, 1/2 cup of ground spent grain and 1/2 tsp of salt
- In a small saucepan over a medium-low heat melt 1/2 cup butter, 1/2 cup brown sugar & 1/3 cup honey until dissolved
- Add the butter mixture to the bowl and stir until throughly combined
- Spread mixture evenly in the pan and press down firmly
- Bake for 25-30mins until golden brown
- Leave them to cool for 10mins in the tray then lift out using the edges of the baking paper & leave to cool for another 20-30 mins or until starting to firm up
- Cut carefully into bars using a sharp knife
