Spent Grain, Ginger, Cashew & Apricot Granola Bars

  1. Preheat oven to 175C & line a 9x13 inch baking tray with buttered greaseproof paper
  2. Coarsely chop 1 cup of cashews, 1 cup of apricots and 1/2 cup of crystallised ginger
  3. Add these to a large bowl & stir in n cups of oats, 1/2 cup of ground spent grain and 1/2 tsp of salt
  4. In a small saucepan over a medium-low heat melt 1/2 cup butter, 1/2 cup brown sugar & 1/3 cup honey until dissolved
  5. Add the butter mixture to the bowl and stir until throughly combined
  6. Spread mixture evenly in the pan and press down firmly
  7. Bake for 25-30mins until golden brown
  8. Leave them to cool for 10mins in the tray then lift out using the edges of the baking paper & leave to cool for another 20-30 mins or until starting to firm up
  9. Cut carefully into bars using a sharp knife
