Caramel Glazed - Hot Milk Cake
- 3/4 c. skim milk
- 1 Tbsp. plus 1 1/2 tsp. margarine
- 1 c. sugar
- 3 eggs
- 1 tsp. vanilla extract
- 1 1/2 c. sifted cake flour
- 1 1/2 tsp. baking soda
- 1/2 tsp. salt
- Caramel Glaze
- Combine milk and margarine in a small saucepan; cook over medium heat until margarine melts, stirring occasionally.
- Cool to 120u0b0.
- Combine sugar and eggs in large bowl; beat at high speed of an electric mixer until light and fluffy.
- Add vanilla, beating well.
- Combine flour, soda and salt.
- Sift flour mixture over egg mixture, beating at low speed.
- Gradually add milk mixture to egg mixture, beating at high speed.
- Spoon batter into a 13 x 9 x 2-inch baking dish, that has been coated with cooking spray.
- Bake at 350u0b0 for 25 to 30 minutes or until cake is golden brown. Immediately spread Caramel Glaze over warm cake.
