Roast Loin Of Pork With Peach Dijon Sauce

  1. HEAT oven to 350u0b0F. Spray shallow roasting pan with no-stick cooking spray.
  2. COMBINE peach preserves and Dijon mustard in small bowl. Season roast generously with salt, pepper and garlic powder. Place in prepared baking pan. Pour peach-Dijon sauce over meat. Roast 1 1/2 hours or until pork reaches an internal temperature of 160u0b0F, basting several times with sauce.
  3. REMOVE roast from pan to cutting board. Tent with foil. Allow meat to rest for 10 minutes. Slice meat 1/4-inch thick. Season pan juices with salt and pepper to taste. Heat and stir pan juices. Pour over meat and serve.
