Peruvian Arroz Con Pollo
- 1 teaspoon salt

- 3 chicken bouillon cubes
- 16 ounces beer preferably something Mexican or Spanish in nature. if not use Budweiser not light
- 2 tablespoons oil whatever kind you prefer
- 1 white onion or red
- 2 tablespoons garlic
- 3 cups rice white, brown, or yellow
- Wash and chop up the desired amount of cilantro. I use about 1 cup total.net a large pot (enough to fit all your chicken and rice together in). Get a plate or bowl ready on the side.

- Heat up your pot to a medium-high. Add your oil
- Once heated up add in all your chicken and brown all sides of it. (You do not need to fully cook the chicken during this step just brown it) About 5 min total
- After browning all your chicken, remove it and put it onto your plate or in a bowl and set it aside.
- Add garlic and onions into the pot which should still have oil in it and saute them until the onions look just right.
- Add your cilantro, aji paste, and 3 chicken bouillon cubes. Crush up the cubes prior to or after adding it. Stir everything together.
- Add 1 can of beer (12-16 oz) and use that can to fill it up with water and add it twice for a total of 24-32 oz of water. Stir everything once more.
- Reduce heat to a medium and add your chicken back into the pot. Cook with a cover for about 20 minute or until chicken is fully cooked through.
- Remove chicken and place it to the side.
- Add your 3 cups of rice to the pot, stir, and allow it to cook. (About 20 min)
- After the rice is cooked add your chicken back in.
- Ready to serve!
