Peruvian Arroz Con Pollo

  1. Wash and chop up the desired amount of cilantro. I use about 1 cup total.net a large pot (enough to fit all your chicken and rice together in). Get a plate or bowl ready on the side.

  4. Heat up your pot to a medium-high. Add your oil
  5. Once heated up add in all your chicken and brown all sides of it. (You do not need to fully cook the chicken during this step just brown it) About 5 min total
  6. After browning all your chicken, remove it and put it onto your plate or in a bowl and set it aside.
  7. Add garlic and onions into the pot which should still have oil in it and saute them until the onions look just right.
  8. Add your cilantro, aji paste, and 3 chicken bouillon cubes. Crush up the cubes prior to or after adding it. Stir everything together.
  9. Add 1 can of beer (12-16 oz) and use that can to fill it up with water and add it twice for a total of 24-32 oz of water. Stir everything once more.
  10. Reduce heat to a medium and add your chicken back into the pot. Cook with a cover for about 20 minute or until chicken is fully cooked through.
  11. Remove chicken and place it to the side.
  12. Add your 3 cups of rice to the pot, stir, and allow it to cook. (About 20 min)
  13. After the rice is cooked add your chicken back in.
  14. Ready to serve!
