Vegetable Casserole
- 1 tablespoon oil
- 1 onion chopped
- 2 cloves garlic crushed
- 1 3/4 pounds zucchini sliced
- 4 medium potatoes peeled, cut into cubes
- 4 stalks celery sliced
- 14 ounces chopped tomatoes
- 2 tablespoons oregano chopped
- 2 1/2 ounces fresh breadcrumbs
- 2 3/4 ounces Parmesan grated
- 2 tablespoons parsley chopped
- Preheat oven to 400u0b0F. Heat oil in a large saucepan on medium heat. Cook onion for 5 mins, stirring, until soft and golden. Add garlic and cook for 1 min.
- Add zucchini, potatoes, celery, tomatoes, oregano and 1/2 cup water. Cover and simmer for 25 mins, or until potatoes are tender. Pour vegetable mixture into an 8 1/2 cup baking dish.
- Mix together breadcrumbs, Parmesan and parsley and sprinkle over vegetables. Bake for 20 mins, until top is golden. Serve.
