Crab Au Gratin - A La Betsy
- 1 lb. lump white crab meat
- 2 stalks celery, chopped
- 1 medium onion, chopped
- 1/2 stick oleo
- 1 (13 oz.) carton half and half milk
- 2 egg yolks
- 1/2 tsp. salt
- 1 tsp. pepper
- 1/4 tsp. garlic powder
- 1/2 lb. grated Cheddar cheese
- 1 tsp. lemon juice
- Saute celery and onion in oleo.
- Gradually blend in half and half.
- Add well beaten egg yolks, salt, pepper and garlic.
- Cook 5 minutes, until slightly thickened.
- Put crab meat in a large bowl; sprinkle with lemon juice.
- Pour mixture from skillet over crab meat; mix well.
- Pour into a large casserole sprayed with Pam. Sprinkle grated cheese on top.
- Bake at 350u0b0 for 15 to 20 minutes. Serves 8.
