Surprise Bread

  1. Prepare the tuna rillettes as instructed here and set aside in a cool place.
  2. Cut the smoked salmon into small strips. Mix with the cream cheese and dilute with yogurt. Add the zest, chervil, and pepper. Salt very lightly if necessary: smoked salmon is already salted.
  3. Spread 3 slices of Swedish bread with the rillettes made from tuna and 2 slices of bread with the rillettes made from smoked salmon.
  4. Cover the slices with the 5 remaining slices of bread.
  5. Stack the 5 "sandwiches" alternating tuna and salmon.
  6. Cut the surprise bread into 4 and hold each stack in place with a skewer. Keep cool before serving.
