Surprise Bread
- tuna spread
- 4 slices smoked salmon
- 5/8 cup cream cheese
- 2 tablespoons yogurt
- 6 sprigs chervil chopped
- 1/2 lemon zest
- 10 slices bread Swedish
- ground black pepper
- Prepare the tuna rillettes as instructed here and set aside in a cool place.
- Cut the smoked salmon into small strips. Mix with the cream cheese and dilute with yogurt. Add the zest, chervil, and pepper. Salt very lightly if necessary: smoked salmon is already salted.
- Spread 3 slices of Swedish bread with the rillettes made from tuna and 2 slices of bread with the rillettes made from smoked salmon.
- Cover the slices with the 5 remaining slices of bread.
- Stack the 5 "sandwiches" alternating tuna and salmon.
- Cut the surprise bread into 4 and hold each stack in place with a skewer. Keep cool before serving.
