Egg Salad Burritos
- 3 eggs
- 1 celery stalk finely chopped
- 1/2 cup peas
- 1/2 cup green beans
- 1 tablespoon light mayonnaise
- 1 teaspoon mustard
- 1/2 teaspoon paprika
- pepper
- salt
- 2 whole wheat tortillas
- lettuce leaves approx 4-5
- jalapeno peppers Pickled, 3-4 approx
- Hard boil the eggs, peel them and chop them up into small pieces.
- Mix the eggs, celery, peas, green beans, mayonnaise, mustard, paprika, salt, and pepper in a large bowl.
- Heat up the tortillas on a pan or in the microwave.
- Set one tortilla on a plate and place one or two leaves of lettuce on top.
- On top of the lettuce place approx. 2 tablespoons of the egg salad and some slices of jalapeno peppers.
- Roll up the tortilla and close it up with a toothpick before serving.
