Egg Salad Burritos

  1. Hard boil the eggs, peel them and chop them up into small pieces.
  2. Mix the eggs, celery, peas, green beans, mayonnaise, mustard, paprika, salt, and pepper in a large bowl.
  3. Heat up the tortillas on a pan or in the microwave.
  4. Set one tortilla on a plate and place one or two leaves of lettuce on top.
  5. On top of the lettuce place approx. 2 tablespoons of the egg salad and some slices of jalapeno peppers.
  6. Roll up the tortilla and close it up with a toothpick before serving.
