Grilled Chicken Strips With Orzo Salad
- 1 pound orzo
- 6 1/2 ounces marinated artichoke hearts jar of
- 3 bunches scallions fresh, - chopped
- 4 cloves garlic - chopped
- Italian parsley Healthy handful of fresh, - chopped
- 3 tomatoes vine ripe, - sliced
- 1 handful fresh basil - ripped
- 1/4 pound bacon sliced
- olive oil
- 1 butter pat of
- 2 stalks celery - sliced
- 1 dash red pepper flakes
- 1 dash salt
- romano cheese for serving
- 3 pounds boneless chicken breast - sliced thin
- 1 tablespoon curry ground
- 2 tablespoons brown sugar
- 1 tablespoon ground cumin
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon chili powder
- 2 tablespoons vinegar
- 1 tablespoon lime juice
- olive oil Drizzle of
- 3 tablespoons mustard
- 2 tablespoons honey
- 1 tablespoon lime juice
- 1 teaspoon balsamic vinegar
- Prepare orzo as directed drain and place in a serving bowl drizzled with olive oil.
- Heat a large frying pan and place the bacon in the pan. The pan should sizzle.
- When the bacon is slightly crispy add chopped scallions, celery, parsley and saute until slightly tender.
- Add the sliced tomato and garlic and toss. Saute another minute or two, add the seasoning and toss into the orzo.
- Add the artichoke hearts with the marinade into the orzo and toss.
- Drizzle with olive oil and serve with grated Romano cheese.
- Place the chicken in a bowl and add all of the above ingredients. Toss and keep covered in the refrigerator for at least one hour or overnight.
- Heat a griddle place the chicken on the heated griddle and grill until golden on each side and cooked through.
