Cedar Wrapped Halibut With Citrus Pesto

- 1/2 cup fresh spinach leaves packed
- 1/2 cup arugula fresh
- 1/4 cup walnuts
- 1 clove garlic
- 2 tablespoons lemon zest
- 2 tablespoons lemon juice
- 2 tablespoons orange zest
- 2 tablespoons orange juice
- 1/4 cup grated Parmesan cheese
- 1/4 cup olive oil
- 24 ounces halibut fillets
- lemon wedges to serve
- Prepare pesto by combining spinach through Parmesan cheese in a food processor or blender and process until finely. With processor on, slowly drizzle oil through food shoot, continuing to process until well blended. Season to taste with salt and pepper and set aside.
- Preheat grill or grill pan to medium heat, about 400u0b0F. Place fish fillets in center of cedar papers; season with salt and freshly ground black pepper. Fold paper edges towards each other and secure with cotton string. Place on grill, seam side down, and cook for 4 minutes per side or until fish is cooked through.
- Remove fish from grill using tongs and serve with a dollop of pesto.
