Southfork Chili
- 2 1/2 to 3 lb. ground beef
- 2 c. chopped onion
- 1 green pepper, chopped
- 3 cloves garlic, pressed, or 3 shakes of garlic powder
- 1 to 2 Tbsp. crushed red pepper
- 3 Tbsp. chili powder
- 2 (1 lb.) cans red kidney beans (undrained)
- 2 cans whole peeled tomatoes
- 1 (8 oz.) can tomato sauce
- 2 tsp. cumin
- 1/2 tsp. oregano
- 2 1/2 tsp. salt
- 1 (12 oz.) can kernel corn
- Brown ground beef and pour off fat.
- Add onion, green pepper, garlic, red pepper, chili powder, cumin, oregano and salt.
- Mix well.
- Cook until onion and green pepper become tender.
- Add beans, tomatoes, corn and tomato sauce.
- Stir to mix well, breaking up tomatoes with a fork.
- Simmer slowly, stirring occasionally, until thickened and blended (about 45 minutes).
