Fish And Spinach Masala
- 4 salmon steaks skinned, each weighing 115-175g, 4-6oz
- 1 7/8 cups brown rice
- 2 garlic cloves crushed
- 1 teaspoon chilli sauce
- 2 teaspoons garam masala
- 2 tablespoons Flora Cuisine or 25g Flora Buttery
- 4 spring onions finely chopped
- 1 teaspoon turmeric
- 2 11/16 cups chopped tomatoes can
- chilli sauce to taste
- 5 7/8 cups fresh spinach leaves
- black pepper
- Mix together the paste ingredients and spread over the fish steaks. Cover and chill for about 2 hours.
- Place the fish in an ovenproof dish, cover and bake in a preheated oven at 180u0b0C, 160u0b0C fan, gas mark 4 for 15-20 minutes or until cooked.
- Meanwhile, to make the sauce, place all ingredients except the spinach in a saucepan and bring to the boil, stirring. Simmer gently for 5 minutes, stirring occasionally. Stir in the spinach, bring to the boil and simmer gently for about 3-4 minutes.
- Cook the rice following packet instructions and drain.
- Serve the fish on the sauce with the rice.
