Quinoa Black Bean Salad With Herbs

  1. In one-quart saucepan, add quinoa, broth, cumin and salt; heat to boiling over high heat. Reduce heat to love (low with care), cover and simmer until liquid is absorbed - about 15 minutes. Remove from heat and let stand five minutes. Fluff and set aside to cool to room temperature.
  2. In a large bowl, whisk oil, lime juice, zest and pepper. Stir in beans, corn, pepper, tomato, green onions, herbs, and quinoa.
  3. To serve, place 1/2 cup greens on salad plate. Spoon quinoa mixture over greens. Serve at room temperature or chilled. Optional: top with sliced avocado, olives or crumbled feta.
