Quinoa Black Bean Salad With Herbs
- 1/4 cup extra virgin olive oil
- 1 cup quinoa rinsed
- 2 cups bone broth or mineral
- 1/2 teaspoon cumin
- 1/2 teaspoon sea salt Celtic
- 4 tablespoons fresh lime juice
- 1 teaspoon lime zest
- 2 cups black beans soaked and cooked
- 1 cup corn frozen or fresh
- 2 tomatoes large ripe, peeled and seeded
- 2 red peppers seeded
- 4 green onions finely chopped
- 1/2 cup cilantro minced
- 1/2 cup basil or parsley, minced
- 4 cups arugula

- In one-quart saucepan, add quinoa, broth, cumin and salt; heat to boiling over high heat. Reduce heat to love (low with care), cover and simmer until liquid is absorbed - about 15 minutes. Remove from heat and let stand five minutes. Fluff and set aside to cool to room temperature.
- In a large bowl, whisk oil, lime juice, zest and pepper. Stir in beans, corn, pepper, tomato, green onions, herbs, and quinoa.
- To serve, place 1/2 cup greens on salad plate. Spoon quinoa mixture over greens. Serve at room temperature or chilled. Optional: top with sliced avocado, olives or crumbled feta.
