Cramer'S Catfish Chowder
- 2 large onions
- 3 large potatoes
- 6 slices smoked country bacon
- 1 can cream of celery
- 4 lb. catfish or with 1 lb. mud fish
- 1 tsp. salt
- 1/2 tsp. pepper
- 3 c. milk
- Fillet catfish.
- Put meat into large pot.
- Add three cups of water, salt and pepper.
- Bring to boil.
- Let simmer for 15 to 20 minutes.
- Cut potatoes into small chunks, then boil until soft. Drain water from potatoes.
- Add catfish.
- Cook bacon in thick skillet.
- When fat is out of bacon, dispose of bacon.
- Cut onions into small chunks and cook with bacon fat until brown.
- Strain fat from onions and add onions to catfish.
- Add cream of celery and 3 cups of milk to catfish.
- Let simmer for 30 minutes, often stirring until catfish is down to small chunks.
- Feeds up to 6 people.
