Beef Nachos
- 1 tablespoon oil
- 1 onion peeled and finely diced
- 2 cloves garlic peeled and finely diced
- 1 9/16 pounds beef mince
- 3 tablespoons tomato puree
- 7/8 cup vegetable stock
- 1 teaspoon cornflour mixed with 1 tbsp water until smooth
- 1/4 teaspoon cayenne pepper
- 1 pinch sugar
- 7 11/16 cups tortilla chips
- 7 1/16 tablespoons cheddar grated
- 2 jalapenos sliced
- Preheat the oven to 400u0b0F. Heat the oil in a saucepan and saute the onion and garlic for 2 minutes. Add the ground beef and cook until browned. Stir in the tomato puree and the stock and bring to a boil. Reduce the heat, cover, and simmer for 10 minutes. Stir in the cornstarch and cayenne pepper and season with salt and a pinch of sugar.
- Brush 2 x 8 inch ovenproof dishes with oil. Arrange the tortilla chips in the bottoms and around the edges. Spoon over the ground beef mixture and sprinkle cheese evenly on top. Bake for 10 minutes.
- Garnish with the jalapenos before serving.
