Deep Dish Apple Pie
- 7 to 8 greening apples
- 1/2 c. brown sugar
- 1/2 c. white sugar
- 1/2 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/2 to 1 tsp. lemon rind
- 1 1/2 Tbsp. cornstarch
- 2 Tbsp. butter
- Peel and core apples; slice thin.
- Mix next 6 ingredients and toss with apples.
- Use a homemade pie crust, or a boxed pie crust from the refrigerator case in the store (I use Pillsbury).
- Spread pie crust in large pie plate and put in half of apple mixture, compacting apples well.
- Dot with remaining butter.
- Top with other crust; slice vents in top.
- Press top crust over and under bottom; squeeze together and flute.
- Sprinkle small amount of milk on crust; spread around and sprinkle with small amount of sugar.
- Bake at 450u0b0 for 10 minutes, then at 350u0b0 for about 45 minutes or until done (test with fork).
