Apricot-Angel Brownies
- 2 bars (4 oz.) white baking chocolate
- 1/3 c. margarine
- 1/2 c. packed brown sugar
- 2 eggs, beaten
- 1/2 tsp. vanilla
- 3/4 c. all-purpose flour
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1 c. dried apricots, finely chopped
- 1/2 c. sliced almonds
- 1/2 c. flaked coconut
- Over low heat, melt together white chocolate and margarine. Remove from heat and stir in brown sugar, eggs and vanilla.
- Mix well and set aside.
- Combine flour, baking powder and salt.
- Stir into chocolate mixture.
- Combine apricots, almonds and coconut. Mix well and pour half into chocolate mixture.
- Pour chocolate mixture into greased 9-inch square pan.
- Sprinkle remaining apricot mixture over top.
- Bake at 350u0b0 for 25 minutes or until golden brown.
- Cool and cut into squares.
- Absolutely wonderful.
