Belgium Waffles
- 2 1/4 teaspoons yeast
- 3 cups milk warm
- 3 egg whites
- 3 egg yolks
- 180 grams butter melted at room temperature
- 1/2 cup sugar
- 1 1/2 teaspoons salt
- 2 teaspoons vanilla
- 4 cups white flour
- Mix the yeast with 1/4 cup warm milk in a large bowl. Let it sit for 5 minutes.
- Mix the egg whites, 1/4 cup warm milk, and butter in a different bowl. Add the yeast mixture.
- Add the sugar, salt, vanilla, flour, and the rest of the milk while stirring, until the mixture has a soft texture.
- Cover the bowl with plastic film and let it sit in a warm place until it size doubles. This should take about 1 to 2 hours.
- Remove the plastic film and stir the dough for 1 minute to remove the air.
- Pour the mixture in a waffle iron and cook until brown on both sides.
- Once ready, store the waffles in the oven at 100C so they keep warm until you finish cooking all of them.
- Serve warm with peanut butter, chocolate, or honey on top.
