15 Minute Meal: Delicious Chorizo Carbonara Recipe
- 3 ounces chorizo spicy
- 4 tablespoons Parmesan cheese
- 2 eggs you can add one extra yolk for creamier texture
- 1 teaspoon olive oil
- 7 ounces spaghetti or linguini
- 4 garlic cloves garlic
- 1 teaspoon butter
- grated nutmeg
- salt
- black pepper
- white pepper
- chilli flakes dried, for serving, optional
- Boil your pasta in a large pot with salted water. Cook as instructions say. Meanwhile your pasta boil prepare your other ingredients.
- Cut your chorizo into small pieces and place in a pan on low/medium heat with a little bit of olive oil (you do not need to add the oil but I like the oil and fatty flavour it gives). Crush you garlic (leave the skin on) and add it to the chorizo. Stir occasionally.
- In a small bowl crack your eggs and season with salt, black pepper, white pepper and with 3/4 of your parmesan (leave some for decoration). Whisk all together with a fork. Remove all garlic form the pan.
- When your pasta is ready remove a cup of hot starchy water form the boiling pot and set aside. Put the heat under your pan with the chorizo on lowest heat. Do not strain your pasta bud place your pasta with a pasta scoop and place it in the pan with your chorizo (if you want to strain your pasta the classical way you can as well). Add your egg mixture and a teaspoon of butter and stir well. Add few tablespoons of the starchy water as well. Stir well. Season with grated nutmeg and if needed additional black pepper or salt.
- Your meal is ready. Season with parmesan and dried chilli. Serve immediately. nnEnjoy.
