Fillet Of Baby Beef

  1. Melt butter in heavy saucepan.
  2. Add onion and garlic and cook until transparent.
  3. Add the mustard and wine and cook for two minutes.
  4. Add the chicken stock and reduce by half.
  5. Add the cream and reduce again by half.
  6. Season as required.
