Chipotle Spiced Kale Power Bowl

  1. Combine olive oil, garlic, and chipotle chili in small sauce pan and place over medium hot heat on stove
  2. Once you start seeing small bubbles, place on medium-low heat and leave for 30 minutes
  3. Strain olive oil and cool
  4. When cooled, combine with lime juice, cumin, cilantro, sea salt, and freshly cracked black pepper
  5. Combine bell pepper with kale, massage dressing into kale and bell pepper, place into bottom of bowl
  6. Top 1/2 cup roasted garbanzo beans, quinoa, and avocado
  7. Optional to add salsa.
  8. Top with fresh squeezed lime
