Chipotle Spiced Kale Power Bowl
- 1/2 cup garbanzo beans Roasted
- 3 handfuls kale
- 1 bell pepper any color chopped
- 1/2 avocado
- 1/2 cup quinoa or black lentils
- 1/4 cup lime juice
- 3/4 cup olive oil
- 1 clove garlic minced
- 1 tablespoon ground cumin
- 1/4 cup chopped fresh cilantro roughly
- sea salt Pinch of celtic
- cracked black pepper Freshly
- Combine olive oil, garlic, and chipotle chili in small sauce pan and place over medium hot heat on stove
- Once you start seeing small bubbles, place on medium-low heat and leave for 30 minutes
- Strain olive oil and cool
- When cooled, combine with lime juice, cumin, cilantro, sea salt, and freshly cracked black pepper
- Combine bell pepper with kale, massage dressing into kale and bell pepper, place into bottom of bowl
- Top 1/2 cup roasted garbanzo beans, quinoa, and avocado
- Optional to add salsa.
- Top with fresh squeezed lime
