Banana-Pecan Biscotti
- 1 3/4 C. flour
- 1 tsp. vanilla
- 1/2 C. sugar
- 1 T. vegetable oil
- 1 tsp. baking powder
- 1 egg
- 1/4 tsp. salt
- 1/3 C. chopped pecans, toasted
- 1/3 C. very ripe banana (about 1, mashed)
- Preheat oven to 350 degrees.
- Lightly spoon flour, sugar, baking powder and salt until blended.
- Combine banana, oil, egg and vanilla in a bowl; stir in flour mixture and pecans (dough will be sticky).
- Turn dough out onto floured surface. Shape into 2- 8 in. rolls. Place on sprayed baking sheet and flatten to 1/2 in. thick.
- Bake at 350 degrees for 23 minutes.
- Remove from pan and cool 10 minutes.
- Cut each roll into 1/2 inch slices.
- Place sides down on pan.
- Bake at 250 degrees for 15 minutes, then turn over and bake another 15 minutes.
- Remove from sheet and cool completely.
- Cookies will harden as they cool.
