Quinoa Salad With Kiwi And Brazil Nuts
- salad
- 1 cup white quinoa rinsed
- 3 tomatoes peeled, cut into cube
- 1 carrot peeled and grated
- 2 kiwifruit peeled, chopped
- 1 handful lettuce leaves coarsely chopped
- sauce
- 2 tomatoes seeded and skin, cut into cube
- 1 lemon
- 1 tablespoon maple syrup
- 1 tablespoon flax seeds soaked for 1 hour
- 2 tablespoons mustard sauce vegan, Dijon
- 2 tablespoons extra-virgin olive oil
- salt Himalaya, or sea, to taste
- 1 pinch black pepper optional
- water q.s.
- brazil nuts Handful of chopped
- dried apricots Handful of chopped, diced
- Cook quinoa following packet directions. Drain. Rinse under running cold water. Transfer to a bowl.
- Wash and chop the lettuce, peel and grate the carrots, cut the tomatoes into cubes and peel and slice the kiwi in slices. Place in a bowl.
- Place in blender all the sauce ingredients and pulse until smooth, add water as needed. Taste and set the flavor to taste.
- Add the cooked quinoa in a serving bowl; add lettuce, carrot, tomato and kiwi. Pour the sauce over the ingredients and garnish with chopped nuts and apricot.
- Serve and Enjoy!
