Lentil Burgers With Braised Beets And Yogurt Sauce
- 2 cups green lentils cans, drained, rinsed and dried
- 1 onion peeled and diced
- 15/16 cup carrots trimmed and finely chopped
- 1 cup mushrooms chopped
- 1 medium egg
- 4 tablespoons breadcrumbs
- 1 teaspoon paprika
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 1/3 pounds beetroot peeled and thinly sliced
- 7/8 cup vegetable stock
- 1 lemon
- 13/16 cup greek yogurt
- 3 tablespoons fresh mint leaves chopped
- For the lentil burgers, pulse the lentils, onion, carrot, mushrooms and egg in a food processor until finely chopped. Mix in the breadcrumbs and paprika and season. Form the mixture into 8 patties. Heat the oil in a frying pan over medium heat and cook the patties for 10-12 mins, turning.
- For the beets, heat the butter in a frying pan. Add the beets and saute them for 3-4 mins, stirring. Pour in the stock and simmer for 4-5 mins, until the beets are tender. Stir in the lemon zest and 2 tbsp lemon juice. Season.
- To make the sauce, mix the yogurt and mint together and season. Arrange the beets and lentil burgers between 4 plates and spoon the sauce on top.
