Simple Chocolate Cheesecakes
- 24 vanilla wafer cookies
- 2 (8 oz.) pkg. cream cheese
- 1 1/4 c. sugar
- 1/3 c. Hershey's cocoa
- 2 Tbsp. flour
- 3 eggs
- 1 c. sour cream
- 1 tsp. vanilla
- canned cherry pie filling, chilled
- Heat oven to 350u0b0.
- Line muffin pans with foil paper cups (2 1/2 inches in diameter).
- Place 1 vanilla wafer in bottom of each cup.
- In large mixer bowl, beat softened cream cheese and sugar. Blend in cocoa and flour.
- Add eggs; beat well.
- Blend in sour cream and vanilla.
- Fill each prepared cup almost full with cheese mixture.
- Bake for 15 to 20 minutes, or just until set.
- Remove from oven.
- Cool 5 to 10 minutes.
- Spread heaping teaspoonfuls of topping (below) on each cup.
- Cool completely.
- Chill.
- Garnish with cherry pie filling just before serving.
