Green Beans Salad
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1/2 teaspoon dijon mustard
- 1 teaspoon chopped garlic
- 1 teaspoon fresh thyme leaves chopped
- 1/2 pound yellow beans or green and /
- 3/4 cup grape tomatoes small halved
- 1 yellow pepper small, diced
- leaf lettuce curly, for garnish
- In a large bowl, whisk together olive oil, vinegar, mustard, garlic and thyme. Season with salt and black pepper, if desired.
- Place beans and 3 tablespoons of water in a microwave-safe bowl. Cover and cook on high for 3-4 mins or until tender. Rinse in cold water.
- Alternative cooking method: in a pot over high heat, boil enough salted water to cover the beans. Cook beans for 3-4 mins or until tender. Rinse in cold water.
- Toss beans, tomatoes and pepper together with vinaigrette.
- In a bowl combine the beans, tomatoes, pepper and lettuce and mix with dressing.
