Gluten Free Bread And Butter Pudding
- 1 3/4 pounds gluten free white bread buttered, crusts removed
- 4 eggs
- 1 cup milk
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- powdered sugar to dust
- mixed berries to serve
- Preheat the oven to 350u0b0F. Grease a 2-quart baking dish.
- Cut the bread into large cubes. Cover the bottom of the prepared pan with half of the bread, trimming to fit snugly.
- Whisk the eggs, milk, cream, sugar and vanilla extract in a large bowl. Pour half over the bread, then top with the remaining bread and remaining egg mixture. Let stand for 10 mins.
- Place the dish in a large roasting pan. Pour in enough hot water to come halfway up the sides of the dish.
- Bake for 45-50 mins, until the custard is set. Dust with powdered sugar and serve with berries.
