Potato-Cheese Patties

  1. Combine potatoes and water to cover in a large saucepan; bring to a boil.
  2. Cover; reduce heat and simmer 20 minutes or until tender.
  3. Drain; reserve potatoes in saucepan.
  4. Add milk and beat at medium speed of an electric mixer until smooth; stir in cheese. Cover and chill mixture overnight.
  5. Combine remaining ingredients in a small bowl, stirring well.
  6. Shape 1/3 cup potato mixture into a 3-inch patty.
  7. Coat with cereal mixture.
  8. Place on an ungreased baking sheet.
  9. Repeat procedure with remaining potato mixture and cereal mixture.
  10. Bake at 325u0b0 for 25 minutes.
  11. Yield: 11 servings (87 calories per serving).
