Cheesy Macaroni With Ham And Mushrooms
- 14 ounces macaroni
- 2 teaspoons vegetable oil
- 2 spring onions thinly sliced
- 1 clove garlic minced
- 7 ounces button mushrooms thinly sliced
- 1 cup half and half
- 1/2 cup heavy cream
- 8 3/4 ounces ham chopped
- 1 1/2 ounces cheddar cheese grated
- 1 1/2 ounces Parmesan cheese freshly grated
- Preheat oven to 400u0b0F. Grease 4 small shallow baking dishes then place on a baking tray. Cook pasta in boiling salted water for 6 mins, or until tender. Drain.
- Meanwhile, heat oil in a frying pan over medium heat, add onion and garlic and cook for 2 mins, or until soft. Add mushroom and cook for 5 mins, or until softened. Toss with pasta, half-and-half, cream, ham, 1/2 the cheddar and 1/2 the Parmesan until combined. Divide between baking dishes, top with remaining cheese and bake for 20 mins, or until golden and heated through. Let cool for 5 mins then serve.
