Crockpot Salsa Chicken
- 3 chicken breasts Large
- 1 can black beans drained
- 1 can white corn Yellow and, drained
- 16 ounces salsa Traditional, I prefer medium
- 1 onion Medium, diced
- brown rice or Quinoa
- plain greek yogurt Optional:, or sour cream
- shredded cheddar Optional:
- avocado Optional:, diced
- Spray your crockpot with pan spray or use a liner. Add your favorite topping and you are done!
- Place the chicken breasts in the crockpot and combine all the other ingredients on top of the chicken.
- Set the crockpot on low heat for 6-8 hours or high for for 4-5 hours.
- When you have 30 minutes left for the ingredients in the crockpot, prepare your rice or quinoa according to the package instructions.
- Fill a bowl with 1/2 cup of rice or quinoa and top with the crock pot salsa chicken.
- Add your favorite topping (optional) and you are done! I added shredded cheddar cheese, plain greek yogurt and diced avocado with some cracked black pepper. Optional toppings: Plain Greek yogurt or sour cream, Shredded cheese, Diced Avocado or Tortilla chips. You can add red pepper flakes to make it spicier too.
