Stuffed Brinjal Curry

  1. Mix Sesame, Peanut and Rasam powder, by adding little salt.
  2. Slit 4 sides of Brinjal in the bottom holding the top intact and stuff with above mixture.
  3. Chop Onion in to small pieces.
  4. In a deep Kadai, heat Oil and add mustard seeds.
  5. When mustard seeds are done.
  6. Add turmeric powder, curry leaves and chopped Onion.
  7. Fry for few seconds.
  8. Now start placing stuffed Brinjals carefully.
  9. Sprinkle little water and salt and close lid.
