Chocolate Pistachio Cakes With Chocolate Fudge Sauce
- 2/3 cup pistachio nuts coarsely chopped, + 2-3 tbsp for decoration
- 9 tablespoons butter softened
- 2 teaspoons vanilla extract
- 1 1/4 cups sugar
- 2 large eggs
- 3/4 cup self-raising flour sifted
- 1/3 cup cocoa powder sifted
- 1/4 cup breadcrumbs stale
- 1/3 cup milk
- 2 ounces dark chocolate coarsely grated
- 5 ounces dark chocolate chopped
- 2 tablespoons butter
- 2/3 cup cream
- Preheat the oven to 350u0b0F. Grease 6 (8 oz) cake molds or oven-proof tea cups (not fine china). Sprinkle the nuts evenly over the base of each mold and place on a baking tray.
- To make the cakes, beat the butter, vanilla and sugar in a medium bowl with an electric mixer until just combined. Add the eggs, one at a time, continuing to mix. Stir in the sifted flour and cocoa, then the breadcrumbs, milk, and the grated chocolate. Spoon the mixture into the prepared molds. Bake for about 30 mins. Allow to stand for 5 mins before turning out.
- To make the chocolate fudge sauce, place the chopped chocolate and butter in a double boiler, do not allow the water to touch the base of the bowl. Stir until chocolate is melted. Add the cream and stir until combined.
- Serve the cakes with the chocolate fudge sauce, sprinkled with extra pistachios and whipped cream if desired.
